Pernand Vergelesses 1er Cru En Caradeux komt van een 1,8 hectare groot perceel op een oostelijk georiënteerde helling, vlakbij de beroemde percelen van Corton Charlemagne. De combinatie van klei, löss en zand en de hoogte van het terroir geven deze Chardonnay een uitgesproken mineraliteit en een precieze, terroir gedreven signatuur. In het glas toont de wijn een bleke goudgele kleur. De neus is zeer fris met delicate citrus accenten en parfums van wit fruit, aangevuld door een karakteristieke minerale, bijna zilte ondertoon. In de mond is de aanzet zeer zuiver en scherp de textuur is fijn besnaard met een mooie complexiteit en een lange, precieze afdronk die de mineraliteit en frisheid benadrukt. De vinificatie is traditioneel en zorgvuldig: handmatige oogst in kleine kistjes, hele tros persing en een koele fermentatie in eiken vaten (circa 16 °C, 15–20 dagen) om zowel complexiteit als frisheid te bewaren. De wijn rijpt op fijne lies in Franse eiken vaten waarbij de keuze van tonneliers en toastniveaus nauwgezet is afgestemd op het terroir. Serveer op 10–12 °C. Uitstekende begeleider van schaal en schelpdieren, licht aangebakken coquilles, tarbot in roomsaus en rijke regionale kazen zoals Époisses of Comté.
