Chassagne Montrachet 1er Cru Les Chenevottes komt van een uitzonderlijk perceel van 1,9 hectare, gelegen nabij de beroemde flanken van Montrachet. De zuid westelijke expositie en de kalk en kleirijke bodems geven deze cuvée een opvallende puurheid en een frisse aromatische precisie die typerend is voor Chassagne. In het glas toont de wijn een bleke, goudgele kleur met een fijne glans. De neus is complex en uitnodigend: florale tonen en frisse citruszesten mengen zich met abrikoos, lichte honingnuances en een subtiele vanille toets. In de mond is hij geraffineerd en goed gestructureerd de textuur is verfijnd, de zuren zijn strak en de mineraliteit geeft een precieze, lange en elegante finale. De vinificatie volgt een klassieke, zorgvuldige aanpak: handoogst, hele tros persing en koele fermentatie in eiken vaten (circa 16 °C, 15–20 dagen) om zowel complexiteit als frisheid te bewaren. De wijn rijpt op sur lie in Franse eiken vaten waarbij het hout mooi geïntegreerd blijft en de terroir expressie centraal staat. Het perceel wordt beheerd met respect voor het milieu en is onderdeel van de biologische aanpak van het domein. Serveer op 10–12 °C. Een elegante partner bij foie gras, fijne schaal en schelpdieren, gegrilde of in saus bereide vis en karaktervolle regionale kazen zoals Époisses of Brillat Savarin.

RETURNS AND EXCHANGES
